The Tailgater's Handbook Recipe for Baked Potato Salad

This may be the best potato salad I've ever tasted.  The recipe is from Linda McNeil who I met at an at an Iowa Hawkeye game.  It's hot, very cheesy and great for cold weather.

Ingredients:

8 cooked peeled and diced potatoes

1 lb. Velveeta cheese, diced

1 cup salad dressing (ala Miracle Whip)

1/3 cup bacon bits

1/2 cup chopped onion

4 tsp. instant chicken bullion

3 hard boiled eggs chopped

Prepare:

Toss everything together and place into a buttered baking dish.   Refrigerate, covered with foil, overnight.  On game day bake at 325 degrees for an hour and ten minutes or until done.
